Wheat-free Fruit-nut Muffins

Ingredients

130 gr rice flour
14 gr baking powder
65 gr oat
30 gr cashews
60 ml honey
60 ml safflower oil
240 ml nonfat milk
2 eggs
140 gr apricots

Combine rice flour, baking powder and oat flour in large bowl. In separate bowl, combine cashews, honey, oil, milk and eggs. Combine egg mixture with flour mixture, stirring gently.
