Wild Mushroom Risotto
Ingredients
40 gr butter
40 gr shiitake mushrooms
65 gr mushrooms stems removed
16 ml oil
32 gr onion
180 gr arborio rice
120 ml dry wine
1,200 ml broth
60 gr mascarpone cheese
20 gr parmesan cheese
5 gr parsley
1,900 gr casserole over moderate hea onion
1/2 at a time
1/4 at the end
60 ml broth
Instructions
vigorously so cheeses melt. Sprinkle with parsley. Serve immediately.
