1 c dates 1/2 amaranth 1 c boiling water 2 eggs 1/2 c honey 1/4 c butter 2 c wheat flour 2 ts baking powder 1 c pecans 1 ts vanilla extract
Instructions
Soak dates and amaranth in boiling water. Beat eggs well, add honey and butter; beat well. Stir in all remaining ingredients mixing well. Pour into an oiled loaf pan. Bake at 350 F for 1 hour and 15 min. From Arrowhead Mills
