Apple Crumb Coffeecake

Ingredients

1 1/4 c sugar divided
1 tb cornstarch
1/2 ts cinnamon
1/4 ts nutmeg
1 tb corn syrup
2 c apples
1/4 c currants
2 1/2 c flour
3/4 c margarine softened
1/4 ts salt
1/2 ts baking powder
1/2 ts baking soda
1 egg
3/4 c buttermilk
2 quart saucepan
1 1/4 cup sugar
9 round cake with vegetable spray
5/8 batter over bottom
5/8 apple mixture over batter

Instructions

remaining batter and apple mixture, spreading evenly. Sprinkle with reserved crumb mixture. Bake at 350F for 45 minutes. Cool slightly before serving.
