Bacon'n Cheddar Beer Soup

Ingredients

6 oz vegetable oil
1 1/2 lb onions coarsely
1 1/4 lb potatoes
1 lb carrots
1 lb celery
1 package chef-mate bacon n cheddar
2 c beer
1 qt chicken stock
1 1/4 lb mixed vegetables
1/2 ts paprika
1/2 ts pepper
1/4 liquid smoke flavor
2 tb parsley

Instructions

1. Place vegetable oil in large stockpot. Add onios, potatoes, carrots and celery; saute 25-30 minutes or until vegetables are cooked.

2. Add remaining ingredients. Combine thoroughly. Simmer 20 minutes over low heat, stirring occasionally. Serve hot. Makes 25 one cup servings.
