Bean Curd Skin Rolls

1 ts shallot
1 tb vinegar
1 1/2 ts soy sauce
1 ts dark soy sauce
3/4 ts sugar
1 ts sesame oil
1/2 tb water
4 black chinese mushrooms
4 bean curd cake
1 celery stalk
1/4 carrot
1/4 ts salt
40 either
1/4 filling mixture onto bean curd skin
