Beef Ragout W/ Sun

Ingredients

some garlic
some additional oil if needed
10 sun tomatoes
4 lb beef chuck
1/2 c flour
4 tb olive oil
2 slices onions
3 slices carrots
3 c beef broth
1 c wine
1/4 c balsamic vinegar
1/4 c tomato paste
4 sprigs parsley
2 sprigs thyme
4 c butternut squash
1 chunks
1/2 ts salt
1/4 ts black pepper
1 package green peas
2 batches
3 tablespoons oil in
8 quart dutch oven
1 tablespoon oil in same over

Instructions

simmer. Cover and cook 15 minutes, or until squash is fork-tender. Dinner Plan: Remove 1/2 of stew to microwaveproof container; cool, then freeze for later use. To remaining stew, add peas (if desired) and wamm thnough. (Approximate microwave times: Defrost 40 minutes: to reheat, add peas and cook 8 minutes, stirring once or twice.) ----
