Breast Of Chick. W/ Leeks & Lime On Zucchini "spahgetti"

Ingredients

some salt and pepper
some leeks mixture on top of breasts
4 zucchini
1/2 cup olive oil
1 flour for dredging
8 chicken breasts
3 cups leeks
1 tablespoon slivered garlic
1/2 cup dry wine
3/4 c rich chicken stock
1 lime zest
3 tbsp lime juice
2 tbsp parsley
3 tbsp slivered sundried tomatoes
1 slice zucchini flowers if available
2 tablespoons olive oil
2 tablespoons olive oil to an oven proof saute
400 degree oven
1 halfway through the baking of the breasts

Instructions

To serve: Arrange zucchini attractively on warm plates and top with breasts and vegetables. Drizzle pan juices over. Garnish with zucchini flowers. Serve hot or at room temperature.
