Caribbean Stew
Ingredients
1 chicken
1 1/2 kg
1 slice onion
500 g pork
2 c water
1 c tomato puree
1/4 c coconut
1 ts salt
1/4 ts cayenne pepper
1/2 ts thyme
1 bay leaf
1 kg sweet potatoes
2 slices bananas
3 cm
1/4 shallots
Instructions
cover and simmer another 5-7 minutes. Turn into a serving bowl and, if you wish, garnish with coconut and snipped green part of shallots.
