Carrot Cake With Lemon Frosting

Ingredients

1 pound carrots
1 cup corn oil
8 ounce unsweetened
4 eggs
1 tablespoon vanilla extract
3 cups unbleached all-purpose flour
2 1/2 cups sugar
1 tablespoon cinnamon
1 tablespoon baking soda
1 teaspoon salt
1 1/2 cups coarsely walnuts
1 pound cream cheese at room temperature
1 1/4 cups butter at room temperature
1 tablespoon lemon juice
2 teaspoons vanilla extract
5 cups powdered sugar sifted
1 edible flowers
1 i used pecans
9 by
1 whisk oil
3/4 frosting over i top with cake
3/4 frosting over i top with third cake
1 frosting
1 with electric mixer
1 one of the best carrot cakes ever
