Catalan Bean Stew

Ingredients

1 tbsp spanish
3 cups vegetable broth
2 onion
4 ripe tomatoes
6 garlic
2 slices country style bread
3 parsnips
1 potato
1/2 cup flat-leaf parsley
4 cups fava beans
1 cup corn kernels
1 salt
1/2 remove the stems
1 transfer the chiles to a blender with a slotted spoon
1/2 parsley

Instructions

Transfer the stew to a bowl or platter and sprinkle with the remaining parsley. Rice or polenta would make a nice accompaniment.
