Chicken-okra Gumbo Plains-style From Tony Bur

Ingredients

some pepper to
1/4 lb salt pork
1 frying chicken
1 flour
3 tb butter
1 onion
20 okra pods
6 tomatoes
1 pepper
3 parsley sprigs
1 bay leaf
2 tb flour
1 package rice
10 okra sufficiently to separate okra be substituted
2 tablespoons flour mixed to a paste with about
1/2 cup water

Instructions

just-cooked, fluffy white rice. Sprinkle crisped pork dice over each serving.
