Chicken Medallions

Ingredients

1 1/2 c mushrooms
2 tb carrot
2 tb green onion
2 tb celery
2 1/2 ts lemon juice
1/4 ts thyme
5 chicken breast
1/2 ts instant chicken bouillon
1 tb cornstarch
1/4 c skim milk
12 oz total
1 1/2 t lemon juice
1/2 thyme
1/8 t pepper
2 pound sheets of plastic wrap
1/8 dash salt
1/4 filling onto chicken

Instructions

thyme, bouillon granules, and 1/2 cup water. Cover and simmer about 15 minutes or till chicken is no longer pink. Remove chicken. Combine cornstarch and milk. Add to skillet. Cook and stir till bubbly; cook 2 minutes more. Remove toothpicks.
