4 chicken breast without skin 5 tbsp lemon juice 3 tbsp soy sauce 2 tbsp balsamic vinegar 2 tbsp basil 2 garlic 1/8 tsp black pepper 16 arugula leaves
Instructions
Combine all ingredients except cheese.Marinate overnight. Grill on one side for 4 minutes. Turn over and add crumbled cheese and contine to cook until cheese melts and chicken is cooked. Serve over a bed of arugula.
