Chicken With Lentils

Ingredients

1 broiler-fryer chicken
2 tablespoons vegetable oil
1 lentils
3/4 cup celery
1/2 cup onion
1/2 cup dry wine
1/4 teaspoon salt
1/2 teaspoon thyme leaves
1 tablespoon parsley
1 clov garlic

Instructions

Remove skin and fat from chicken pieces. Heat oil in nonstick Dutch oven or 12-inch skillet until hot. Cook chicken in oil over medium heat about 15 minutes or until light brown on all sides; drain. Stir in remaining ingredients except parsley; break up tomatoes. Heat to boiling; reduce heat. Cover and simmer 35 to 40 minutes or until juices of chicken run clear and the lentils are tender.
