Chippotle Mussels With Orange Mayonnaise
Ingredients
4 mussels
3 tb garlic
1 zest
2 oranges
4 chippotle chiles
4 c water
3 tb olive oil
8 tb orange juice
15 sprigs of cilantro
1 egg yolk
1 c virgin olive oil
1 orange zest
1 tb lime juice
2 tb cilantro
1/2 oil
1 tbls of orange mayonnaise
Instructions
speed until emulsified. Add the other sauce ingredients and blend together. Let sit for at least 1 hour to allow the orange flavor to develop. From The Coyote Cafe Cookbook by Mark Miller
