Cinnamon Soy Rolls

Ingredients

3 cups unbleached flour
1 cup soy flour
2 tablespoons wheat gluten
4 teaspoons dry yeast
1 tablespoon sugar
1 teaspoon salt
4 ounces firm tofu
1 1/2 cups warm water
1/4 cup brown sugar
1/2 cup raisins
1 cinnamon cooking spray
1 soy flour replaces the usual butter
1 dough
1/2 brown sugar
1/2 at the far edge
8 equal
