Coconut Chess Pie

Ingredients

4 eggs
1 1/2 c sugar
1/2 c butter
1 tb vinegar
1 ts vanilla
1/2 ts salt
1 c coconut
1 pie shell

Instructions

-baked Toasted flaked coconut (OPT) Combine first 6 ingredients. Beat well. Stir in 1 cup coconut; pour into partially baked pie shell. Bake at 325~ for 45 to 50 minutes or until set. Cool on wire rack. Garnish with toasted coconut. From Southern Living, Sept. 1986. ----
