Corsican Cheesecake

Ingredients

2 lemons zest only
6 eggs
5/8 c sugar
2 ts vanilla extract
2 lb milk ricotta
1 butter flour for confectioners sugar fruit
3/8 egg whites cheese mixture
9 springform

Instructions

refrigerate. (The cake can be made 1 day in advance.) To serve, release sides of springform pan, leaving cheesecake on pan base. Sprinkle top with confectioners' sugar and garnish with fresh fruit.
