Cuban Beans And Rice

Ingredients

2 tb olive oil
1 glove garlic
1 green pepper
2 c black beans
1/4 ts oregano
1 tb vinegar
2 pimientos
3 c rice

Instructions

Heat the oil in a skillet, add the green pepper and garlic and saute' for about 3 minutes. Stir in beans, oregano, vinegar, and pimientos. Add salt and pepper to taste.
