Curried Oysters With Banana Salsa

Ingredients

4 tb curry powder
4 tb butter
2 shallots
2 garlic
2 fish fumet
2 c cream
20 wellfleet oysters
2 whitefish trimmings
1 c mushrooms
1 carrot
1 slice onion
1 oyster liquor
1 c wine
4 c water
1 bay leaf
1 t peppercorns
1/2 t fennel seed
2 sprigs parsley
1 t thyme
4 bananas
2 serrano chiles
2 tb corn oil
2 tb line juice
2 cilantro
2 t mint
2 tb tamarind paste
1/2 c bell pepper
1/2 dice
1/4 cup remains
