Curried Shrimp Topping

2 teaspoons vegetable oil
1 onion
1 rib celery
1/2 cup bell pepper
1 garlic clove
2 teaspoons curry powder
3/4 cups chicken broth
1/4 cup golden raisins
1 orange all-fruit fruit spread
8 ounces shrimp
1 teaspoon cornstarch
1/2 teaspoon salt
1/4 cup cucumber
2 tablespoons mint
