Easy Lamb Creole Gumbo From Tony Burke
Ingredients
2 tb vegetable oil
1 flour
2 lamb riblets
2 packages stewed tomatoes
4 c chicken broth
1 c wine
1/2 c parsley
1/2 slices lemon
2 ts salt
1 ts thyme
1 bay leaf
1 ts instant garlic
1 package okra
1 package black-eyed peas

NOTE: Meat may be removed from bones before servings. This gumbo freezes well.
