Fish Fumet
Ingredients
2 lb fish trimmings
2 qt water
1/4 c tarragon vinegar
2 celery stalks with leaves
2 carrots
2 leeks
1/2 head of lettuce
10 peppercorns
5 dill sprigs
3 parsley sprigs
2 bay leaves
1 ts thyme
1 ts salt
Instructions
Combine all ingredients in 4to 5-quart saucepan and bring to boil. Reduce heat and simmer uncovered 45 minutes. Strain through colander or cheesecloth-lined strainer before using. --
