Grilled Pompano With Smoked Tomato And Balsamic Vinaigrette

Ingredients

2 pound pompano
4 tomatoes
1/2 bunch onion
1 tablespoon basil chiffonade
12 year old balsomic vinegar
1 salt pepper
1/2 deep slits
2 on both sides of the pompano

Instructions

Remove pompano from smoker and lightly oil and season with salt and pepper. Grill pompano for 7 minutes on each side. Serve with vinaigrette.
