Hawaiian Turkey Salad

Ingredients

3 c brown rice
2 c turkey
8 oz pineapple chunks in juice drain
8 oz water chestnuts
1 apple
3/8 c macadamia nuts
1/2 ts salt
1/2 c yogurt
1/4 c coconut

Instructions

Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt. Toss lightly with yogurt and 1 tablespoon pineapple juice. Serve on lettuce leaves and garnish with coconut.
