Hearty Vegetable Beef Soup

Ingredients

2 lb stew beef
1 1/2 c corn
3 1/2 qt water
2 slices onions
1 onion
1 potato
1 t salt
1 c spinach
1/2 t thyme
1 c green beans
1/2 c split peas
1 c green peas
6 slices carrots
1 c lima beans
3 c celery
1 c ketchup
1 green pepper
2 t parsley
3 tomatoes

Instructions

In large kettle, cover beef with water and add chopped onion, salt, thyme. Bring to boil. Skim fat from surface. Add split peas, cover and simmer over low heat, 3-4 hours. Add all remaining ingredients. Cover and simmer 30 minutes. Adjust seasoning.
