Herbed Sweet Pepper Soup
Ingredients
1/4 cup olive oil
2 cups onion
1 1/2 pounds sweet peppers
1 tablespoon garlic
1 1/2 pounds ripe tomatoes
1 1/4 teaspoons rosemary
1 1/4 teaspoons thyme
1 1/4 teaspoons marjoram
1/2 teaspoon basil
2 bay leaves
2 cups chicken broth w
2 cups water
1 teaspoon cumin
1 1/4 tablespoons ginger
Instructions
3. Remove from heat and cool for 20 minutes, then transfer to a blender and puree. After cooling, may be refrigerated for up to 2 days. Reheat over low heat.
