Jerk Rub

Ingredients

1 onion
1/2 c scallion
2 ts thyme
2 ts salt
1 ts allspice
1/4 ts nutmeg
1/2 ts cinnamon
4 peppers
1 ts black pepper

Instructions

If you've ever had jerked chicken or pork this is the rub that's used. Mix together all the ingredients to make a paste. a food processor fitted with a steel blade is ideal for this store leftovers in the refrigerator in a tightly closed jar for about a month.
