Lemony Cheesecake With Fresh Fruit

Ingredients

1/4 c graham cracker crumbs
16 oz fat-free cream cheese
1 package eagle brand fat free
4 egg whites
1 egg
3/8 c realemon lemon juice from
1 t vanilla extract
3/8 c unsifted flour
1 assorted fruit

Instructions

Preheat oven to 300 degrees F. Spray bottom of 8-inch springform pan with cooking spray; sprinkle crumbs on bottom of pan. In mixer bowl, beat cheese until fluffy. Gradually beat in Eagle Brand until smooth. Add egg whites, egg, ReaLemon and vanilla; mix well. Stir in flour. Pour into prepared pan. Bake 50 to 55 minutes or until center is set. Cool. Chill. Serve with fruit. Refrigerate leftovers.
