Low-fat Alfredo

Ingredients

1 tablespoon butter
1/4 cup all purpose flour
3 cup milk
1 teaspoon salt
1/2 teaspoon pepper
1 pinch nutmeg
3/4 cup parmesan cheese
1 pound fettuccine

Instructions

Melt butter. Add flour; cook, stirring, 1 minute. Whisk in milk, salt, pepper and nutmeg. Bring to boil, whisking; reduce and simmer, stirring occasionally, 5 minutes. Toss with cheese and cooked pasta.
