Madeira Roast Pheasant

Ingredients

3 tb butter
3 coarsely celery -stalk
2 coarsely carrot
2 bay leaf
2 tb herbs de provence
3 pheasants
4 wings chicken
2 backs chicken
1 c room temperature
1/4 madeira
1 qt chicken broth
1 tb all purpose flour
450 de melt
2 tablespoons butter in roasting
2 tablespoon herbs de provence
375 de meanwhile
1 cup butter with
1 1/2 tablespoons herb butter evenly over breast under skin
2 tablespoons herb butter cavity
3 liquid
1 tablespoon butter in saucepan over low hea flour

Instructions
