Mariachi Beefballs And Rice

Ingredients

2 lb beef
1 c corn chips
1/2 c milk
1 egg
3 t salt
2 1/2 t unbleached flour
2 t butter
2 c onion
1 clove garlic
1 t chili powder
1/4 t powdered cumin
1/2 c ripe olives
1 mexican rice
1 pt dairy sour cream
4 oz green chilies
3 c seasoned rice
1/2 lb monterey jack cheese
1/4 c parmesan cheese
1 t sal cover
15 meatballs
2 tablespoons rounded meat mixture
2 1/2 t flour
1/2 at a time
9 baking
1 cup rice
1/2 sour cream-chili mixture
1/2 cup cheese

Instructions

Bake in moderate oven (350 degrees F.) for 25 minutes. Sprinkle with Parmesan cheese and top with meatballs and sauce. Continue baking for 5 minutes or until cheese melts.
