Mushroom Crust Quiche

Ingredients

1/2 lb mushrooms
2 tb butter
1/2 c green onions
3 eggs
1/4 ts salt
1/4 ts cayenne pepper
1/2 c fine dry bread crumbs
1 c cottage cheese
1 monterey jack

Instructions

Cheese Melt butter in skillet,add mushrooms and saute until golden,about 10 minutes.Stir in bread crumbs,then pat into a 9" pie pan or divide among eight 4" tart pans. Combine cheeses and remaining ingredients;spoon into prepared crust.Bake @ 350 degrees 35 to 45 minutes,until puffy and golden. Cool about 10 minutes before serving.Makes one 9" pie. ----
