Papas A La Arequipena
Ingredients
5 chilies
3/8 annato seed
2 c oil
2 slices eggs
1 slice corn
1/4 c cilantro
3 lb potatoes
1 lemon
1 lime
1 garlic
2 ts salt
1 lb cheese
2 cups warm water
1/4 cup achiote oil mashed potatoes
1/2 cup walnuts
1/2 cup reserved pepper soaking liquid
2 tablespoons sal process until smooth
1/2 crumbled cheese
1 1/2 balls
Instructions
leaves, spooning a little sauce on top. Garnish with eggs, corn, coriander and olives. Serve at room temperature.
