Pat's Potato Stew

Ingredients

1 1/4 c onion
3/4 c water
1 celery stalk
2 c potatoes-cubed
1/4 c carrots
1/2 c cabbage
1/2 c kale
1 garlic clove
1/2 ts paprika

Instructions

Cook onion in water over low heat for 25 minutes. Add remaining ingredients and cook for 30 minutes. Per serving: 184 cal, 6 g prot, 38 g carb, .5 g fat (3%) From _Vegetarian Voice_ Vol 19 No 4
