Polo Havidge Loobia

Ingredients

3/8 c kidney beans
1/2 lb carrots
1/2 ts sugar
5 tb corn oil
4 1/4 c water
2 c rice
1 potato
1 tb water
1/2 ts cinnamon
1 tablespoon oil
4 cups water to a in
2 tablespoons remaining oil in a enough to spread
1 tablespoon water
1/2 cup rice over the potatoes
2 over the top

Instructions

the potato and oil will develop their own crisp crust on the bottom. Serve warm. Serve 4 to 6 with other dishes.
