Ingredients

3 c pumpkin flesh
4 shallots
5 c chicken-like
2 c arborio rice
1/2 t powdered saffron
1 c dry wine
1 t sage
1 stock stirring constantly
1/2 cup at a time stirring constantly until absorbed until the rice is
1/4 c parmesan it would
1 gram fat
