Quiche Aux Fruits De Mer

Ingredients

1 pastry shell partially
2 tablespoons green onions
3 tablespoons butter
1/4 pound shrimp
2 madeira
1/4 cup swiss cheese
3 eggs
1 cup cream
1/4 teaspoon salt
1 pinch pepper
2 tablespoons wine

Instructions

Cook onions in butter 1 to 2 minutes. Add fish and stir 2 minutes. Add pepper a nd white wine. Raise heat and boil 1 minute. Allow to cool slightly. Beat eggs, cream and seasonings. Gradually add fish mixture. Pour egg-fish mixture into p astry shell and sprinkle with cheese. Bake at 375 degrees for 25 to 30 minutes. Serves 4 to 6.
