Redcurrant And Spiced Lime Schiacciata

Ingredients

350 g strong bread flour
15 g butter
2 tsp caster sugar
1 tsp cinnamon
1/2 sachet yeast
225 ml hand water approx
175 g almonds
1 lime rind
5 tbsp single cream
1/2 tsp vanilla essence
2 eggs
3 tbsp caster sugar
450 g redcurrants stalks removed
1 icing sugar for dusting
20 cm

Instructions

To freeze: wrap in foil and freeze for up to 2 months.
