Savory Seafood Custard

Ingredients

4 egg whites
2 tb fish sauce
2 ts ginger
2 tb green onion
4 clams in shells
1/4 c water
1 clam in
4 custard
3/4 size
2 deep
1/4 cup liquid from clams
1/4 cup water
2 teaspoons fish sauce
1/4 mixture
1 1/2 wide

Instructions

a clam doesn't open, discard it and cook another.) Use clams warm or cool. Reserve 1/4 cup of the cooking liquid.
