Seafood Enchiladas

Ingredients

1 lb unpeeled shrimp
4 1/2 c water
1/4 c calorie margarine
1/4 c all purpose flour
10 1/2 oz low-sodium
1 c low-fat sour cream
2 jalapeno pepper
1/8 ts salt
1 c nonfat cottage cheese
1/2 lb lump crabmeat
4 1/2 oz green
1/2 c fat monterey jack cheese
6 corn tortillas
4 cups water to a in a saucepan
1/2 cup water
3/4 cup sauce in bottom
2 baking dish coated with cooking spray
3/8 seafood mixture across center of tortilla
1/2 cup onion
1/4 cup no salt added tomato juice
2 tablespoons cilantro
1/8 teaspoon salt

Instructions

combine all ingredients in a small bowl, stirring well. yield : 1 1/2 cups. ----
