Sherried Chicken Livers
Ingredients
3 slices bacon
1/2 slices wide
1 lb chicken livers
1 onion
1/4 lb mushrooms
1 clove garlic
1/2 ts basil
1/2 ts oregano
1/4 savory
6 oz tomato paste
3/4 c dry sherry
3/4 c chicken stock
1 tb butter
1 tb olive oil
1/4 c parsley
Instructions
and serve hot over rice, polenta or pasta. (Editorial note: After trying all three, I very much prefer rice with this dish.) Serves 4.
