Sorrel Frittata
Ingredients
3 stems removed
1/2 c boiling water
6 eggs
5 tb sour cream
1 pn cayenne pepper
1 until tender
2 tb butter
1/4 shallot
2 tablespoons salt and pepper
10 broiler proof skillet over low hea shallot
3 tablespoons sour cream over top
Instructions
paprika. Broil until top is light brown, watching carefully. Transfer to platter. Surround with sorrel leaves. Cut into small slices. Serve hot or at room temperature. *Can substitute torn spinach leaves.
