Tabbouli Salad

Ingredients

1 c bulgur wheat
2 c boiling water
3/8 c vegetable oil
3/8 c lemon juice
2 ts salt
1 ts pepper
1/2 c parsley
3 tb mint
2 ts mint
6 green onions
2 tomatoes

Instructions

Pour boiling water over wheat in a bowl. Let stand one hour. Drain well and return to bowl. Add remaining ingredients and blend well. Chill at least two hours. Serve on a bed of lettuce.
