Thai Satay With Spicy Peanut Sauce

Ingredients

2 lb pork
3/4 c coconut milk
40 bamboo skewers
1 1/2 lemon grass
3 from the root
2 1/2 galanga
5 1/2 tb onions
4 tb garlic
2 tb coriander seeds
1 tb indian curry powder
1 tb kaffir lime leaves
2 1/2 tb sugar
4 ts salt
7 seeded chilies
2 cilantro roots
1 1/2 tb lemon grass
1 ts coriander seeds
1 1/2 ts thai shrimp paste
5 c consistency coconut
3/8 c creamy peanut butter
1/4 c sugar

Instructions

In a blender or food processor, grind the listed ingredients, from lemon grass to salt, finely. Mix with the meat (wear latex gloves to do this, it stains) and marinate for 1 hour.
