2 1/2 lobster
2 tb butter
1 onion
1 carrot
1 celery stalk
1 garlic clove
1 thyme
1/4 ts thyme
1 tarragon
1/4 ts tarragon
1 bay leaf
2 tb cognac
3 lb butter
3/8 c tomato paste
18 lotte
1/2 c butter
1/4 c shallot
1/4 c cognac
2 c cream
2 tablespoons clarified butter
2 tablespoons cognac
1/2 cup clarified butter in skillet over high hea working in batches if necessary
1/2 cup cognac
1 cup cream to skillet
1/2 cup lobster butter a little at a time
Instructions
Place lobster pieces between pieces of lotte. Nap with sauce; garnish with parsley and serve immediately.
