Vegetable Jello

Ingredients

4 oz orange
3/4 c boiling water
1/2 c water
1 tb lemon juice
1/2 c celery
1/2 c carrot
1/2 c cabbage

Instructions

Completely dissolve gelatin in boiling water. Combine cold water and the ice cubes to make 1 1/4 cups. Add to gelatin with lemon juice, stirring until slightly thickened. Remove any unmelted ice. Fold in vegetables. Spoon into individual dessert cups. Chill until set about 30 minutes. Additional Combinations: Along with the sliced celery try grated carrots and golden raisins; or chopped cucumber and chopped pimientos; or drained mandarin orange sections and chopped green pepper.
