Vegetarian Red Bean Stew

Ingredients

2 cups beans washed sorted
3/8 cup olive oil
1 1/2 onions
2 teaspoons salt
1/2 teaspoon black pepper
4 garlic
7 ounce green chili peppers mild fire
2 parsnips peel
2 carrots peel
2 celery ribs
1 zucchini trimmed
1 squash trimmed
2 quarts water
1 teaspoon salt
1 teaspoon sal simmer until all the vegetables are soft
