Velvet Pumpkin Cake

Ingredients

1 1/2 c baking powder
1/2 c sugar
3/4 c pumpkin pie mix
1 egg
2 tb shortening
1 ts vanilla

Instructions

Blend all ingredients except the whipped cream in a large mixer bowl on low speed 1/2 min, scraping bowl frequently. Beat 4 mins. medium speed. Pour batter into greased and flours square pan, 8 by 8 by 2 inches or round layer pan, 9 by 1 1/2 inches. Bake @ 350 deg. for 35-40 mins or until wooden pick inserted in center comes out clean. Serve warm with whipped cream. Says it makes a one layer beauty, served warm in a snowdrift of whipped cream.
